Tomato Meatball
Ingredients
- 1 pkg meatballs
- 1 canned tomato
- 2 bay leaves
- 1 tsp oregano
- 1 onion
- 1 celery
- 1 carrot
- 2 clove minced garlic
- 1 tsp minced ginger
- Pinch of salt & pepper
- Parsley for garnish
- 2 tbsp olive oil
Directions
- Chop onion, celery and carrot into small pieces then stir fry with oregano and a pinch of salt and pepper.
- Add garlic and ginger. Stir fry well.
- Puree tomato using blender.
- Combine tomato and vegetables, add bay leaves then simmer for 20 minutes.
- Add the meatballs then simmer with small heat for another 10 minutes.
- Sprinkle parsley then it’s ready to serve.
