Marinated “KALBI” Short Rib for BBQ

Korean BBQ beef short rib with bone, aka LA Kalbi or Galbi, is a popular Korean dish. It consists of marinated beef short ribs that are grilled or broiled to perfection. The ribs are cut across the bone, marinated in a mixture of soy sauce, garlic, sugar, sesame oil, and other seasonings, and then grilled over high heat for a smoky, charred flavor. Served with a side of rice, lettuce leaves, and various vegetable side dishes such as kimchi, pickled radish, and sautéed vegetables. It is a favorite dish for many Koreans and has gained popularity worldwide.

Marinated “KALBI” Short Rib

Ingredients

  • 2 pounds of beef short ribs (Kalbi cut)
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup sesame oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon ginger, grated
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon black pepper
  • 1/4 cup green onions, sliced (optional, for garnish)
  • Sesame seeds, for garnish

Directions

  1. In a large bowl, combine soy sauce, brown sugar, sesame oil, garlic, onion, ginger, honey, rice vinegar, and black pepper.
  2. Whisk the marinade until the sugar is dissolved.
  3. Place the beef short ribs in a Ziploc bag or a shallow dish and pour the marinade over the meat, making sure it is evenly coated.
  4. Refrigerate the marinated Kalbi for at least 4 hours, or overnight for maximum flavor.
  5. Preheat your grill to medium-high heat.
  6. Remove the beef short ribs from the marinade and discard the excess marinade.
  7. Grill the Kalbi ribs for about 3-4 minutes per side, or until they reach your desired level of doneness. Make sure to turn them occasionally to prevent burning.
  8. Once cooked, remove the ribs from the grill and let them rest for a few minutes.
  9. Sprinkle the marinated Kalbi with sliced green onions and sesame seeds for garnish.
  10. Serve hot with steamed rice and your favorite side dishes.
