Every Onigiri is made with carefully selected ingredients to experience the best of our rice

We use “Hitomebore” rice, primarily sourced from the northern Tohoku region. “Hitomebore” is a crossbreed of “Koshikihari” and “Hatsuboshi,” offering an excellent balance of stickiness, luster, umami, and fragrance. This rice variety is truly captivating in terms of its appearance and taste. In fact, “Hitomebore” translates to “Love at first sight” in English, as its sweetness and deliciousness are bound to leave you yearning for more.

To bring out the full sweetness of the rice, we use Moshio (or Mojio) from Setonaikai (Seto Inland Sea) for our Onigiri. Moshio, a traditional Japanese condiment, evaporates seawater to collect the salt residue. It’s called “Moshio” because “藻 Mo” means seaweed and “塩 Shio” means salt in Japanese. Moshio has a unique flavor—salty, slightly sweet, and umami-rich from seaweed and seawater minerals.

Our high-quality Nori Seaweed from Japan is carefully packaged individually to preserve its flavor and crispness. When wrapped around the Onigiri just before eating, it maintains its delightful crunch and enhances the taste, perfectly complementing our rice and creating the ultimate Onigiri experience.
