From Fluffy Pancakes to Okonomiyaki: A Guide to Japanese Pancakes + Recipe

When you think of pancakes in the US, the image that comes to mind is the beloved breakfast classic served with a generous pour of maple syrup, along with savory sausages and crispy bacon.

But what about pancakes in Japan? While you can find similar pancakes there, they are somehow called “hotcakes” instead. What’s more, Japan has unique varieties that differ quite a bit, from sweets that have been enjoyed since the Edo period, to a savory, cabbage-filled “pancake” known as okonomiyaki, which is more of a meal than a dessert.

In this blog, we’ll dive into the diverse and fascinating world of Japanese pancakes!

Hotcake(ホットケーキ)

Hotcakes are the most popular type of sweet pancake in Japan. They look similar to American pancakes, and the ingredients are nearly the same: flour, baking powder, eggs, sugar, and milk. However, when pancake culture was introduced from the West, the term “hotcake,” a unique Japanese English word, became widely used. Just like regular pancakes, hotcakes are served with butter and syrup, and are enjoyed for breakfast or as a snack.

Fluffy Soufflé Pancake(スフレパンケーキ)

Fluffy soufflé pancakes originated in Japan. While the exact origin is debated, popular shops such as Shiawase no Pancake in Osaka and bills in Tokyo are often mentioned. Their jiggly and charming appearance is captivating, but it’s the light, airy texture that offers a completely new pancake experience, gaining popularity on social media in the U.S. as well. The secret lies in folding stiffly whipped egg whites into the batter, creating a soft and airy thickness that seems to defy gravity. They are cooked slowly at a low temperature, giving them a soufflé-like texture that melts in your mouth. In cafes and restaurants, they’re often served with butter, syrup, seasonal fruits, and whipped cream, making them a popular treat.

Dorayaki(どら焼き)

Many people may know dorayaki as the favorite treat of Doraemon, a popular Japanese anime character. Doraemon is a cat-shaped robot created by Fujiko F. Fujio, and in the manga and anime, there are frequent scenes of him enjoying his beloved dorayaki.

Dorayaki is a traditional Japanese sweet consisting of two small, round, pancake-like cakes sandwiching sweet red bean paste (anko). The cakes have a slightly sweet and moist texture. The ingredients are almost the same as those used for regular pancakes—flour, eggs, milk, and sugar—but sometimes mochi flour or shiratamako is added to create a chewy texture. The fillings are not limited to simple anko; varieties like anko butter, matcha cream, chestnuts, and fruit are also popular, making it a versatile treat that can be easily adapted to different seasons.

Imagawayaki (Kaitenyaki, Gozasōrō)

Imagawayaki is a traditional Japanese sweet that is said to have originated from the area around Imagawa Bridge in Tokyo during the Edo period, which is how it got its name. The batter, made of flour, eggs, milk, and sugar, is poured into a metal mold and filled with sweet red bean paste (anko) before being baked to perfection. Due to its delicious taste and familiarity, it quickly gained popularity throughout Japan. Interestingly, because of its popularity, the name varies depending on the region. In the Kanto area, including Tokyo, it is known as Imagawayaki, while in the Kansai region, it is called Kaitenyaki or even Gozasōrō, after a famous shop in the area.

Taiyaki(たい焼き)

Taiyaki is a traditional Japanese sweet that evolved from Imagawayaki, made with the same ingredients. However, it is shaped like a sea bream (tai), which is why it’s called taiyaki. In old Japan, sea bream was considered a luxury fish and a symbol of good fortune, often served at celebratory events such as New Year’s festivities. Because of its association with good luck, the shape inspired the creation of taiyaki.

Even today, it remains a popular treat, and you can easily spot taiyaki stalls while strolling through large shopping streets in Japan. While the standard filling is sweet red bean paste, variations like custard cream, matcha cream, and sweet potato paste are also commonly enjoyed. It’s also a great choice as a small gift!

Okonomiyaki(お好み焼き)

A Okonomiyaki is a popular Japanese teppan-style dish made by cooking a batter of flour mixed with shredded cabbage, pork, seafood, and other ingredients. There are two main styles: Kansai-style and Hiroshima-style. The Kansai style involves mixing all ingredients into the batter before cooking, while the Hiroshima style layers the batter and ingredients like a stack. The dish is typically topped with okonomiyaki sauce, seaweed flakes (aonori), bonito flakes (katsuobushi), and mayonnaise.

There are also variations derived from okonomiyaki, such as modan-yaki, which includes egg noodles in addition to the standard ingredients, and negi-yaki, which uses green onions and konjac instead of cabbage and is seasoned with soy sauce. The Kansai and Hiroshima regions are famous for okonomiyaki, so be sure to visit one of the many renowned restaurants if you have the chance to explore these areas! of curry with a thicker, less liquid sauce compared to traditional Japanese curry. It usually features ground meat, onions, and various other vegetables cooked with curry spices, and seasoned for a rich flavor. Enjoy with egg yolk or “Onsen Tamago” soft boiled egg on top!
