Chilled Pork Shabu Udon with Mixed Nut Dressing

A refreshing chilled udon dish that's light, flavorful, and easy to enjoy.

Ingredients (Serves 1)

  • Mixed Nut Dressing (this product): 45g (approx. 3 tbsp)
  • Mentsuyu (Japanese noodle soup base): 15g (1 tbsp) Adjust the concentration according to the saltiness of your mentsuyu.
  • Water: 15ml / 15g (1 tbsp)
  • Dried udon noodles: 90g (approx. 3.2 oz)
  • Tomato: 1/4
  • Cucumber: 1/4
  • Green onion: as needed
  • Thinly sliced pork (for shabu-shabu): 60g (approx. 2.1 oz)

Instructions

  1. Cut the tomato into wedges. Julienne the cucumber. Finely slice the green onion.
  2. Bring a pot of water to a boil and cook the udon according to the package instructions. Rinse thoroughly under cold water to remove excess starch and cool the noodles, then drain well.
  3. After removing the udon, add a small amount of water to the same pot until the boiling subsides. Add the pork slices and cook gently while separating them with chopsticks. Once fully cooked, drain and let cool naturally without rinsing in cold water.
  4. This helps retain the pork's flavor and tenderness.
  5. Place the udon in a serving bowl. Top with the pork, tomato, and cucumber, then garnish with green onion.
  6. In a bowl, combine Mixed Nut Dressing (this product) and mentsuyu. Pour over the udon and serve.
